Asian Slaw

(presented at King Market 9/20/09)


makes 1 quart 

for the slaw:

  • 2 cups thinly sliced cabbage
  • 1/3 cup thinly sliced shiitake mushrooms
  • 1/3 cup thinly sliced yellow bell pepper
  • 1/3 cup thinly sliced red bell pepper - sliced thin
  • 1/3 cup thinly sliced green onion
  • 2/3 cup thinly sliced cooked protein (tofu, beef, chicken, or duck)

for the dressing:

  • 1 tbsp chopped garlic
  • 1 tbsp grated or minced fresh ginger  
  • 1/2 cup soy sauce
  • 1/4 cup sesame oil
  • 1/8 cup citrus juice (lemon, lime, or orange) 

Directions: Combine all slaw ingredients in a large bowl. In a small bowl, whisk together dressing ingredients. Allow dressing ingredients to mingle for 15-20 minutes, and then pour over the slaw and toss. Served slaw chilled or room temperature.
