Asian Slaw
(presented at King Market 9/20/09)
makes 1 quart
for the slaw:
- 2 cups thinly sliced cabbage
- 1/3 cup thinly sliced shiitake mushrooms
- 1/3 cup thinly sliced yellow bell pepper
- 1/3 cup thinly sliced red bell pepper - sliced thin
- 1/3 cup thinly sliced green onion
- 2/3 cup thinly sliced cooked protein (tofu, beef, chicken, or duck)
for the dressing:
- 1 tbsp chopped garlic
- 1 tbsp grated or minced fresh ginger
- 1/2 cup soy sauce
- 1/4 cup sesame oil
- 1/8 cup citrus juice (lemon, lime, or orange)
Directions: Combine all slaw ingredients in a large bowl. In a small bowl, whisk together dressing ingredients. Allow dressing ingredients to mingle for 15-20 minutes, and then pour over the slaw and toss. Served slaw chilled or room temperature.
