Lomi Lomi Salmon

makes 2 cups
Lomi lomi translates from Hawaiian as “to massage.” This comes from the "massaging" which occurs either when rubbing the salt into the salmon before dicing, or when mixing all the chopped ingredients together.
- 6-8 oz. fresh Coho salmon
- salt
- ¼ cup diced torpedo onion or shallot, in ¼-pieces
- ¼ cup sliced green onion, in ¼-inch crosswise slices
- ½ cup diced fresh tomato, in ¼-inch cubes
- optional: 1 Tbsp. diced jalapeno or 1 Tbsp. chili oil
Directions: Massage salt into the salmon to taste. Cut salmon into ¼-inch cubes. In a bowl, combine salmon, torpedo onion or shallot, green onion, and tomato and mix. Add jalapeno or chili oil if using. Add additional salt if necessary. Serve chilled.
