Fresh for Less: delicious ways to get more from your farmers market dollar with guest chef, Paul Folkestad.
Paul Folkestad is one of many disciples from Zefiro Restaurant still working in Portland. Paul has been an instructor at Western Culinary Le Cordon Bleu since 2003, where he specializes in General Education and PR functions. He had a 2-year stint cooking on KATU's AM Northwest, and he's also been a Food Writer and a Caterer. He received Instructor of the Year awards in 2005 and 2008, and among his other exploits he's established a Slow Food Chapter on the WCI Campus. He and his wife and two boys reside in NE Portland.
